Our oldest daughter is our baker in the family! We are never lacking in the baked good department here! Our tummies are forever grateful. My waistline however...not so much.
This recipe is great on its own, but our daughter added a glaze to it that put it over the top!
Pineapple Bars
1 c. butter, softened
2 c. sugar
4 eggs
1-1/2 c. all-purpose flour
1/2 t. baking soda
1/2 t. salt
2-1/2 c. crushed pineapple, very well-drained
1/2 c. chopped nuts (optional)
Garnish: powdered sugar (or a glaze...see recipe below)
In a large bowl, blend butter, sugar and eggs, adding one egg at a time. Beat in flour, baking soda and salt. Stir in pineapple gradually, distributing it evenly throughout the batter. Stir in nuts (if using). Spread batter in a greased 13x9 baking pan. Bake at 350 degrees for 35 to 40 minutes. Cool in pan for 10 to 15 minutes. Sprinkle with powdered sugar (or let cook a bit and top with glaze -- see below); cut into squares. Makes 16 to 20 bars.
Optional glaze topping:
1/4 c. milk
1 to 1 1/2 c. powdered sugar
Mix and pour over bars. Very yummy!
