The girls and I have been perusing the book for weeks trying to narrow down our selections to make and review for you! The three that I picked are yummy! Mom does know best. Ha!
Today's selection that we're sharing is Blastin' Blueberry Crunch found on page 210 of the cookbook. It's like fruit crisp with a twist.
Blastin' Blueberry Crunch
1-1/2 c. quick-cooking oats, uncooked
1 c. all-purpose flour
3/4 to 1 c. brown sugar, packed
1/2 c. butter, melted
1/2 t. cinnamon
Optional: 1/4 t. salt
1/2 c. sugar
1 T. plus 1/8 t. cornstarch
3/4 c. water
2 T. lemon juice
1 t. vanilla extract (use our homemade recipe HERE)
3 to 4 c. fresh or frozen blueberries
Garnish: ice cream or whipped topping
In a large bowl, combine oats, flour, brown sugar, butter, cinnamon and salt, if using; mix well. Spread half of oat mixture in bottom of a greased 8"x8" baking pan; set aside. In a saucepan over medium heat, combine sugar and cornstarch; add water and lemon juice. Bring to a boil; boil until thick, stirring constantly. Stir in vanilla and blueberries. Pour over oat mixture. Sprinkle remaining oat mixture over top. Bake at 350 degrees for 40 to 45 minutes. Cut into squares; serve warm, topped with ice cream (or whipped cream). Makes 8 servings.

Fried chicken mashed potatoes and grandmas homemade gravy I am lucky grandma always taught us he lil secrets and I can master her taters secret was to heat the milk and butter and slowly mix sorry my mom passed when I was young so I can't remeber much she made.
My favorite thing my mother used to make was a homemade German Chocolate cake with coconut-pecan frosting. It was something that she made for my father's birthday which fell sometimes at Easter. That with roasted turkey and stuffing were always on the menu for his special day. Robin Coxon

Favorite meal is: probably meals around the holidays- that's when the old family favorites come out- stuffing, turkey, mashed potatoes, pies, rolls, etc. But also Roasted Chicken, Mac and Cheese, and Veggies are also a favorite :)
growing up I hated eggs. My mother made a quiche that has spinach and leek soup mix in it and some canadian bacon. Got me to eat eggs because I love spinach and this type of bacon. Now I make this quiche at family and holiday gatherings and well it doesn't stick around very long at all.
My favorite thing to make is... cinnamon rolls as big as your head!! Love ya Carmen!

My Nana made hoe-cake on top of your wood cooking stove in an iron skillet. Then she would fry (yes fry) huckleberries (with brown sugar, real butter, and nutmeg) to spoon on top. The only thing close to this was when she made fried apple (half moon) pies fried in real lard! Oh, wow. Those were the days of real food!!! Lila
