Mexican Lasagna
1 lb. ground beef
1 - 1/4 oz. pkg. taco seasoning
8-oz. pkg. 10-inch flour tortillas
8-oz. pkg. cream cheese, softened and divided
1 c. shredded cheddar cheese, divided
8-oz. can tomato sauce, divided
Brown beef in a skillet over medium heat; drain. Add taco seasoning and cook according to package directions. Spread 2 tortillas with 1/4 of the cream cheese and place cheese-side up in an ungreased 13"x9" baking pan; spoon 1/4 of the beef mixture over tortillas. Top with 1/4 the shredded cheese and 1/4 the tomato sauce. Repeat layers 3 more times, ending with cheese. Bake, uncovered, at 350 degrees for about 25 minutes, or until heated through and cheese is melted. Serves 4 to 6.
*Notes* In place of the taco seasoning packet I used my own taco seasoning recipe HERE. I just sprinkled about 2 tsp. of it on the beef and stirred it before putting it in the lasagna. Instead of 8 oz. of tomato sauce I used about 14 oz. from a 15 oz. can of tomato sauce. It served the 9 of us that ate it very well!
