This recipe is "the best pasta recipe in the whole wide world"! According to several of my children!
Cajun Chicken Pasta
3 to 4 boneless, skinless chicken breasts, cut into strips
2 t. Cajun seasoning (see Tuesday's post HERE)
2 T. butter
8 slices green pepper
8 slices red pepper
4 mushrooms, sliced
2 green onions, sliced
2 c. whipping cream
1/4 t. dried basil
1/4 t. lemon pepper
1/4 t. salt
1/8 t. garlic salt
1/8 t. pepper
8 - oz. pkg. linguine, cooked
Garnish: grated Parmesan cheese
In a bowl, toss chicken strips with Cajun seasoning. In a skillet over medium heat, saute chicken in butter about 5 minutes, until fully cooked. Add peppers; mushrooms and onions; saute for 2 to 3 minutes. Reduce heat; add cream and remaining seasonings. Heat through but do not boil. Toss with linguine or spoon over individual servings of linguine. Garnish with Parmesan cheese.
Serves 4 to 6.
Notes:
*I used a two cans of cooked chicken (it was Hormel, but I can't tell you what size can...about the size of a large can of tune). I just warmed it in the butter which took less than the five minutes needed to cook raw chicken.
*I used 1 teaspoon of onion powder in place of the green onions.
*I used 16 oz. of linguine and had plenty of sauce to go with it.
I served this along with steamed veggies and Simple Garlic Bread.
