I fell in love with a lot of the pasta dishes in the cookbook so I claimed last week's menu as "Pasta Week". I was super excited! I love pasta! Some members of the family weren't so excited. However, this one got a thumbs up from most of the family! I'll post the recipe with my notes where appropriate.
I must apologize for my (a-hem) lack of food staging talent. A talent I have yet to acquire. *wink*
Easy Cheesy Manicotti
4 to 6 qts. water
1-1./2 t. salt, divided
1 T. olive oil
12-oz. pkg. manicotti
(our store was out so I used large shells instead)
8-oz. pkg. cream cheese, softened
2 c. cottage cheese
12-oz. pkg. shredded Monteray Jack cheese
12-oz. pkg. shredded mozzarella cheese
1 egg, beaten
1 T. fresh parsley, chopped
(I used 1-1/2 t. dried)
1 clove garlic, minced
(I used 1/8 t. garlic powder)
24-oz. jar spaghetti sauce
(I like Hunt's Garlic & Herb)
Bring water and one teaspoon salt to a boil; add olive oil and manicotti. Allow to resume boiling; boil for 6 to 8 minutes. Drain boiling water; fill with cool water and set aside. In a bowl, blend cheeses, egg, parley, garlic and remaining salt; set aside. Spread a thin layer of spaghetti sauce in an ungreased 13"x9" baking pan. Spoon cheese filling into each manicotti until about 3/4 full; arrange on top of sauce. Pour remaining sauce over manicotti; bake, uncovered, at 350 degrees for 30-45 minutes. Let cool 5-10 minutes before serving.
Serves 6. (Fed all 9 of us just fine!)

B Vosb Babcock I doubled the recipe, used a jar of sauce , added a lb of cooked chopped meat. This is pretty much the same as a Garbage Bread, only its stuffed with Spaghetti. Add some marinara on the side, and you've got a meal

Mac & Cheese..in any form...is true comfort food to me.
I had lasagna once that had pepperoni added to it in addition to the ground beef. The best I've ever had.
For our family it would be a toss up from cheese and macaroni and lasagna (hope I spelt that right)
My cooking skills and creativity leave a bit to be desired so a book like this would be very valuable.
Happily God has given me "some" skills so my family don't go hungry LOL.....

My favorite pasta dish is my mom's homemade spaghetti & meatballs. She would simmer the sauce half the day and make huge meatballs with 1/2 ground beef & 1/2 ground pork. Sometimes she would change it up and add a little wine for a different flavor. No matter which way she made it, it was delicious. Thanks for the entry. :) Teri

dang , i was soo busy humming the music , i wasnt paying attention about posting a best ever pasta recipe . well, i do make a killer spagetti recipe , but lately that has been toned down to noodles and a jar of sauce [ feeling too sick for making a special effort to make my sauce ] ... nothing impressive there , but what the kids [ grandkids love ] is me making noodle pudding with the leftover spagetti , or any other noodles for that matter . plates get licked clean .. and seconds eaten , what more o i want ???

Oh my goodness. Do I love pasta. I could eat it every day. I should be Italian. I love lasagna, pizza, and spaghetti. Unforunatley my love for it hasn't helped my waste line, but it is so good.
