Impossible Pumpkin Pie

It's October and I'm all about fun fall foods!  Just in case you hadn't noticed lately with the Spiced Pumpkin Fudge and the Amazing Caramel Corn recipes! 

My husband's uncle did not like pie crust at all when he was a child.  I don't think he'd eat pie crust today if you paid him. So his mom (Grandma Frays) had to come up with something that he would eat during the holidays.  She came up with this recipe.  Now, don't get me wrong.  I love, love pie crust!  I think it totally completes the dish, but this crustless pie recipe is really good, too!  I've found that kiddos that don't like pie like this recipe. Bakers who are intimidated by making pie crust love this recipe as well!  Even if you are the queen of beautiful pie crusts give this recipe a try.  It's super easy.  You'll be glad that you did!



Impossible Pumpkin Pie
3/4 c. sugar
1/2 c. Bisquick
1 t. cinnamon
1/2 t. ginger
1/2 t. nutmeg

2 T. butter (softened)
1 can evaporated milk
2 eggs
1 16 oz. can pumpkin
2 t. vanilla
 

In your stand mixer (or mixing bowl) combine the dry ingredients (the first five) then add the rest of the ingredients.  Mix on high speed for one minute (in a stand mixer or with a hand mixer).  Pour into a greased 9x13 baking dish.  Bake in a pre-heated 350 degree oven for 50-55 minutes or until you can pull a clean knife out while testing.
