Super Simple Granola

A dear friend gave me a link to The Happy Housewife the other day for a granola recipe.  I've been reading THH for a long time and I can't believe I missed this recipe!

It's super simple.  I am thinking about tweaking it a bit.  For a yogurt topping, though, it works great!  The eldest boy even liked it as cereal!

Granola
  • 3 cups dry oatmeal
  • 1/2 cup butter
  • 1/2 cup honey
  • 1/4 teaspoon salt
  • 1/2 cup wheat germ
First melt the butter in a 3-quart saucepan over medium heat. Add the honey and salt and briefly heat with the butter. Turn off the heat and add the oatmeal and wheat germ. Stir. Pour the mixture onto a cookie sheet. Spread the mixture out evenly and bake it at 375° for 10 minutes. It will be a golden brown color. Remove from the oven and let cool. Store in an airtight container.

I missed this one too!!! perfect timing as I'm out of granola and have a whole bunch of wheat germ to use, I have a breakfast cookie recipe I use it for but don't make them but ever few months, I like to add walnuts and chocolate chips to mine, what do you add?

I just made granola this morning- similar recipe, so super simple! No worries on the button, Carmen...When it's ready it's ready!!

L2L, Well since I'm a newbie at granola I don't have much to share about additions. I'm thinking raisins, sunflower seeds, cinnamon, etc. I'll probably play with it a bit this weekend. I'm running low on honey, though, so it might have to wait.

Granola is a great staple to have in the house and is great to jazz up a nice bowl of oatmeal.

1/3 c of quick oats
2 tbsp of your favorite granola (or see www.berkshiregrain.com)
boiling water - add enough boiling to your desired consistency, stir, no need to cook on top of stove.

to make granola bars: add 1 beaten egg to 4 cups granola. Press into a lightly greased 9x13x2 pan. Bake at 350 for 20-30 minutes. Score when removed from over. After thoroughly cool, cut into bars. Store in snack size zip loc bags individually.

sometimes we swap out the honey and use maple syrup :)
