My mother-in-law makes these every Christmas and they are so yummy! Yes, I know it's not Christmas, but they sounded so yummy I just had to share them with you!Baby Cheesecakes
19 oz. cream cheese - softened
3 eggs
1 tsp. lemon juice
1 tsp. vanilla
1 c. sugar
vanilla wafers
Paper baking cups
Place paper baking cups in muffin pans. Place one vanilla wafer in each cup. Mix all ingredients and fill cups 3/4 full. Bake in a preheated 375 degree oven 12-15 minutes. Fill center indentations with pie filling of your choice. I sometimes use our home made cherry filling.
